יְהִי רָצוֹן מִלְּפָנֶיךָ, ה’ אֶלֹקֵינוּ וֵאלֹקֵי אַבוֹתֵינוּ, שֶׁתְּחַדֵשׁ עָלֵינוּ שָׁנָה טוֹבָה וּמְתוּקָה

Which means….

May it be your will, Hashem our G-d and G-d of our forefathers, that we should be renewed for a good and sweet year for us.

We take an extra sweet apple and dip it in super sweet honey to have a year full of good and sweetness. We want to be able to see the good. Everything that comes from Hashem is good but we want to able to taste the sweetness and only have good that is revealed to us so it’s clear to us good dipped in good and sweet.
