Rams Head

Before we eat the Rams Head we say…

יְהִי רָצוֹן מִלְּפָנֶיךָ, ה’ אֶלֹקֵינוּ וֵאלֹקֵי אַבוֹתֵינוּ, שֶׁנִהְיֶה לְרֹאשׁ וְלֹא לְזָנָב

Which means….

May it be your will, Hashem our G-d and G-d of our forfathers, that we should be like the head and not the tail.

We eat the ram’s head so this year we should be the head and not the tail. It also reminds Hashem of the Akida (Sacrifice) of Yitchak (Issac) which we also read on Rosh Hashanah Krias HaTorah.
